Bündnerfleisch or raw ham with gorgonzola - mascarpone
Ingredients (per portion)
- 50 g finely sliced genuine Bündnerfleisch or raw ham
- 50 g mascarpone (mascarpone mixed with gorgonzola)
- Freshly ground pepper
- Fresh strips of chives for binding the rolls
- Fresh baguette or a white loaf (optional)
Method (Preparation time: approx. 15 minutes)
Spread the slices of Bündnerfleisch with a little mascarpone and roll out carefully. Bind with the strips of chives and serve decoratively on a plate.
This speciality also makes an excellent starter if the fresh bread is spread with the mascarpone mixture, topped with a slice of Bündnerfleisch or raw ham and served as a roll or a canapé accompanied by rocket lettuce.
